Pumpkin Spice Vanilla Granola

There are not too many foods that can be considered a breakfast, lunch, dessert and snack! We use this granola for almost EVERYTHING! We use it to top our smoothie bowls or any dish that you feel needs that added crunch, we eat it as cereal with raw milk, we even simply eat it plain. This granola recipe is a weekly staple in our household. The beauty of it is that this is a great base recipe to which you can create your own delicious granolas that meet you and your families needs. You can add additional seeds, nuts, nut butters, chocolate chips or dried fruits. The possibilities with this Pumpkin Spice Vanilla Granola are as endless as it is delicious!

Ingredients:

4 cups organic rolled oats 

4 cups chopped walnuts or nut of choice

1 tbsp cinnamon

2 tbsp organic pumpkin spice seasoning

1/2 cup coconut oil

2/3 cup organic vanilla maple syrup or honey

2 tbsp organic vanilla extract or you could substitute with 1 tbsp vanilla bean powder. 

Pinch of Celtic sea salt or Himalayan salt 

Instructions:

  1. First preheat your oven to 300 and line a baking sheet with parchment paper.
  2. In a large mixing bowl add all of your dry ingredients (oats, nuts and spices), and stir together.
  3. In a pot on the stove warm up your coconut oil, once melted whisk in your maple syrup and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until everything has been coated evenly. Pour your granola on to the sheet pan and spread it out into an even layer.

Note: If you like a crispier granola, divide this up on to two sheet pans.

  1. Bake in the oven for 45-60 minutes, or until the edges start to get a bit darker. (If dividing on to two sheet pans bake 25-30 minutes).
  2. Enjoy warm fresh out of the oven or let cool completely. The granola will get crunchier as is cools.
