High-Fiber Protein Bars

These homemade high-fiber bars are loaded with nutrient-dense ingredients, providing a balanced blend of fiber, protein, and healthy fats. Perfect for a quick energy boost, a post-workout pick-me-up, or a wholesome snack anytime you need it.

Ingredients

2 cups organic rolled oats

1/2 cup organic ground flax

Wet Ingredients:

1.5 cups organic pitted dates

Add-Ins:

3/4 cup organic sunflower seeds

1/2 cup organic sprouted pumpkin seeds

1/2 cup organic cacao nibs

Topping:

1 bar Lily’s Hazelnut Milk Chocolate, broken into small pieces

Instructions

  1. Prepare the Base:
    • In a food processor, blend the rolled oats and ground flax until fine. Transfer to a large bowl.
    • Next, blend the pitted dates in the food processor until smooth.
  2. Combine Ingredients:
    • Add the oat and flax mixture back into the food processor with the dates. Blend until fully combined.
  3. Fold in Add-Ins:
    • Transfer the mixture to a large bowl and fold in the sunflower seeds, sprouted pumpkin seeds, and cacao nibs.
  4. Assemble the Bars:
    • Line a baking sheet with parchment paper. Spread the mixture evenly, pressing firmly to pack it down.
    • Sprinkle the chocolate pieces over the top and press lightly to embed them into the mixture.
  5. Chill and Serve:
    • Place the baking sheet in the refrigerator and chill for at least 1 hour.
    • Once set, cut into bars and enjoy!
