Ingredients
2 cups organic gluten-free rolled oats
1/2 cup raw sprouted pumpkin seeds
1/2 cup raw sunflower seeds
1/4 cup uncooked millet
1/4 cup organic unsweetened shredded coconut
2 tbsp chia seeds or ground flaxseeds
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp sea salt
Wet Ingredients
1/4 cup melted coconut oil
1/4 cup almond butter
1 tsp vanilla extract
4-6tbsp pumpkin puree
Instructions
- Preheat Oven:
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper. - Combine All Ingredients:
In a large mixing bowl, add the oats, pumpkin seeds, sunflower seeds, millet, shredded coconut, chia seeds, cinnamon, ginger, nutmeg, and sea salt. Pour in the melted coconut oil, almond butter, vanilla extract, and pumpkin puree. - Mix and Coat:
Stir everything together until all the dry ingredients are evenly coated with the wet mixture. - Bake the Granola:
Spread the granola mixture evenly on the prepared baking sheet. Bake for 30-45 minutes, stirring halfway through to ensure even toasting, until golden and fragrant.
Cool and Store:
Allow the granola to cool completely on the baking sheet. Store in an airtight container for up to two weeks.
