Ingredients
For the Chia Pudding:
1 cup almond milk (or your preferred plant-based milk)
1/4 cup chia seeds
1 tsp Anima Mundi butterfly pea flower powder
1 tbsp maple syrup (if allowed on protocol)
1 tsp vanilla extract
For the Toppings:
Culina plain coconut yogurt
Mixed berry coulis (recipe below)
Cinnamon spice crunch granola (https://shainasnourishnetwork.com/cinnamon-spice-crunch-granola/)
For the Mixed Berry Coulis:
1 cup mixed berries (fresh or frozen)
1 tbsp maple syrup (optional)
1 tsp lemon juice
Instructions
- Prepare the Chia Pudding:
- Add almond milk, butterfly pea flower powder, maple syrup (if using), and vanilla extract directly to your serving jar or glass. Stir until the powder is fully dissolved.
- Add the chia seeds and stir well to combine, ensuring no clumps remain.
- Let the jar sit for 5 minutes, then stir again to evenly distribute the chia seeds. Cover and refrigerate for at least 2 hours or overnight until the pudding thickens to a gel-like consistency.
- Make the Mixed Berry Coulis:
- In a small saucepan, combine the mixed berries, maple syrup (if using), and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.
- Remove from heat and let cool. Blend for a smoother consistency if desired or leave slightly chunky for texture.
- Assemble the Layers:
- Once the chia pudding has set, add a layer of Culina plain coconut yogurt directly on top.
- Spoon the mixed berry coulis over the yogurt layer.
- Top with a generous sprinkle of cinnamon spice crunch granola for texture and flavor.
- Serve and Enjoy:
- Serve immediately or store in the fridge and add the granola just before serving for freshness.
