Ingredients:

2 cups cashews (soaked in hot water for 15-20 minutes if not using a high-speed blender)

3 large garlic cloves

1/2 tsp salt

4 tbsp apple cider vinegar

4 tbsp tapioca flour (optional, for extra thickness) (https://amzn.to/3NSxMWg

2 cups water

2 tsp Italian seasoning

Instructions:

  1. Serve and Enjoy: Pour over your favorite pasta, drizzle on roasted vegetables, or use it as a dip!
  2. Prepare Cashews: If you’re not using a high-speed blender, soak the cashews in hot water for 15-20 minutes to soften them, then drain.
  3. Combine Ingredients: In a blender, add the cashews, garlic cloves, salt, apple cider vinegar, water, and Italian seasoning.
  4. Blend Until Smooth: Blend on high speed until the sauce is completely smooth and creamy. This may take a few minutes, especially if you’re using a regular blender. Stop to scrape down the sides as needed.
  5. Adjust Thickness (Optional): If you want a thicker sauce, add the tapioca flour with all other ingredients and blend. For example, when using this as a pasta sauce I do not add the tapioca; when using it as a pizza sauce I add the tapioca flour.
