Gut Healing Matcha Latte

Organic ceremonial grade matcha (cooled) 
1 organic frozen banana 
1/2 cup organic cashews soaked (soak for minimum 15 min for a creamier texture) 
2 organic dates 
1/2 tsp organic cinnamon 
Handful of ice cubes 
3/4 cup organic vanilla almond milk 
Topped with coconut milk foam 

Instructions: 

Put the cashews in a high speed blender and fill with enough water to cover them. Set aside and let soak for at least 15 minutes. 

In a kettle boil the water for your matcha. In a separate bowl portion out your matcha and sift it through a small fine mesh strainer to remove any lumps. Once the water is boiling, pour it over the matcha and whisk until frothy. Set aside and let cool. 

Drain the water out of the blender leaving only the cashews. Add to blender the: dates, cinnamon, ice cubes and almond milk. Blend until smooth and creamy. 

Add some matcha to the bottom of your cup reserving some for topping. Add in the mixture from the blender and top with the additional matcha. In a small saucepan or frother add some organic coconut milk and froth. Top the latte with the coconut milk foam and sprinkle more cinnamon on top to taste. Enjoy!
