Butterfly Pea Flower Rice with Stinging Nettle

Ingredients:

1 cup organic white basmati rice 

1.5 cup water 

1 tbsp organic stinging nettle 

2 tbsp organic butterfly pea flower 

5 small sheets organic seaweed  

Instructions:

  1. First wash the rice and continue to wash until the water is clear.
  2. Place rice, water, stinging nettle, butterfly pea flowers and seaweed in a pressure cooker. 
  3. Cook on high for 12 minutes.
  4. Release steam after 12 minutes, stir and serv. 

Note: If cooking on stovetop; bring water to a boil, pour in rice, cover and cook until all water has been absorbed and rice is fluffy, roughly 15-25 minutes.
